Fried noodles with green asparagus

 

Preparation

Chop the asparagus diagonally into 2 cm pieces. Peel and finely chop the root ginger. Drain the tofu, dry with kitchen roll and dice finely. Cook the asparagus for 2 minutes in salted boiling water and drain. Bring 2 litres of water to the boil and remove from the heat. Add the rice sticks to the water and leave the noodles to simmer for 3 minutes. Drain the noodles. Heat the oil in a wok. Add the tofu and stir fry for 3 minutes until golden brown. Add the root ginger, asparagus and curry paste and stir-fry for 2 minutes. Add the soy sauce and rice sticks and stir well. Add salt and pepper to taste. Delicious with a mixed salad.


suggestions

Replace the tofu with 250 g chicken breast if preferred.
