Thai Pineapple Rice

 

Preparation

Soak the rice in cold water for 30 minutes. Drain the rice. Bring a pan with 1 litre of salted water to the boil and add the rice. Cook the rice over a low heat for 10 minutes. Drain.
Chop the pepper and chicken breast into strips.
Heat the oil in a wok and stir fry the chicken breast until golden brown. Add the pepper and continue to cook for 1 minute. Mix pineapple rice spice paste with the chicken and cook for 2 minutes. Add the drained pineapple chunks. Stir the rice through the other ingredients and add salt and pepper to taste. Heat through. Stir in the coriander just before serving.
Delicious with a green salad.
