Although for a European family 1 teaspoon can be enough for a whole dish, Meena rather prepares 1 kilo curry paste in one go. She doesn’t use it for red curry only, but also for special dishes, soups, fried rice and wok dishes.
We were very impressed by the rich taste of her curry paste, which can be seasoned to the desired spiciness with a bit of extra coconut milk.
